Looking to refine your pour over at home? Our coffee team shares a few pointers with our latest release, Bolivia Takesi Geisha.
Adjusting ratios, grind size and pour rate are just a few ways to modify a coffee’s tasting notes to your liking. See the guidance below for your next brew:
•20g coffee to 340g water (1:17 ratio).
•205°F water temp.
1: Start timer, begin 60g bloom.
2: At 25 seconds, pour to 100g.
3: At 1 minute, pour to 260g.
4: Once grounds become visible, pour to 340g.
•If it tastes thin, muted or sour: first grind finer, then consider updosing.
•If it tastes bitter or astringent: first grind coarser or pour more gently.

Grown high in a narrow fold of the Bolivian Andes, at what may be the highest coffee farm in the world, this coffee develops under extreme conditions. Slow, steady cherry ripening brings exceptional clarity and depth, while the Iturralde family's meticulous care preserves the elegance of the Geisha variety and the character of this remarkable place.
In the cup, it is floral and complex, with lively bergamot aromatics and a sweetness reminiscent of rainbow sorbet and açaí.
We're excited to share this special coffee with you for our 13th consecutive year — it will not last long!

We've refreshed our seasonal drink menu in a big way with three new options you must try this spring!
Meet the Brown Sugar Miso Latte, a hot or iced creation that perfectly captures a sweet and umami balance. To its left is the delightfully refreshing Iced Tea Sour, a true crusher that deserves several repeat orders. Capping off our lineup is the Strawberry Cloud Matcha, an introduction of strawberry cold foam and puree to our classic matcha latte.

Through the noise, energy and excitement surrounding the Auction for Peace in Colombia, our coffee team secured the winning bids on three top-rated lots that are now ready to be enjoyed.
The final release from our visit last fall is Astrid Ipia Peña Pink Bourbon, a washed coffee flush with tropical fruit sweetness and bright, aromatic stone fruit. Astrid’s pink bourbon cherries and their meticulous processing scored fifth out of more than 500 lots submitted to the auction.
Through this auction, we discovered standouts that embody everything our Special Selection coffees are about. More importantly, our team forged new relationships with producers in Colombia that bolster our direct trade mission. Click our link in bio to experience the culmination of this journey.
