The Hestia Chef team will be pairing 7 of these special w**es with 5 courses of live-fire driven cuisine.

Benvenusa was founded in 2023 by Bobby Stuckey MS, and Lachlan Mackinnon-Patterson, who have been business partners for over 20 years since founding the iconic Michelin-starred restaurant Frasca Food and W**e in Boulder, Colorado. Their passion for the region of Friuli Venezia Giulia is profound, having traveled to the region countless times, not only for regional inspiration but also for their w**e company, Scarpetta, established in 2007. Now, their portfolio features all artisanal, truly micro producers, that farm less than 10 hectares of vineyards, harvest by hand and are driven by an earnest desire to make serious, compelling w**es.

The mission of Benvenusa is to import small Italian growers who, for the most part, have never been imported into the U.S. These artisanal viticoltori represent what we have always loved about the country’s lesser-known w**e-growing areas — undiscovered Italy, yet w**es that cast a wide net of deliciousness and application. They hope that through their efforts, Benvenusa can bring greater awareness to these great regions and celebrate the next generation of emerging w**emakers.

Today we join Mamani in Dallas but we’re still thinking about when they joined us for our last Lone Star Dinner collaboration

We started off with a few small bites —
a croquette with Benton’s Country ham, manchego ;
and candied tomato gazpacho with basil, sherry vinegar;
an onion tart french onion soup with red w**e ;
And an uni tostada with sweet peppers, blue corn, recado negro

Followed by
hiramasa crudo with green coriander, ajo blanco, vadouvan crumble

chilled corn velouté with blue crab, tomato dashi with Oscietra caviar

tomato tonnato with sungold tomatoes, fingerling potatoes, Siberian Sturgeon caviar

grilled summer vegetables with chickpea & turmeric emulsion, pickled chanterelle mushroom

pork shoulder with shrimp & pork sausage fig leaf and farro

roasted squab with foie gras , cherry, Robuchon style mashed potatoes

We finished things off with an olive oil cake with goat cheese mousse, cherry and preserved lemon

Turn left onto 3rd Street and continue walking until you reach Nueces Street. Turn right onto Nueces Street and continue for one block. The location will be on your left.

If driving, take I-35 to exit 234C toward 6th-12th Streets. Merge onto IH-35 Frontage Road and turn right onto E 6th St. Continue straight until you reach Nueces St and turn left. The location will be on your right.
