France in the 1970’s: French Nouvelle! Menu till the last week of March.

In the early 1970s, French cooking underwent one of its most dramatic transformations in centuries. The
movement that catalyzed this change — nouvelle cuisine — was not a sudden invention but a gradual
rejection of the heavy, cream-laden classical tradition codified by Auguste Escoffier at the turn of the
twentieth century. Two food critics, Henri Gault and Christian Millau, gave the movement its name and
its manifesto in 1973, outlining ten commandments that would reshape how the world thought about fine
dining. The principles were straightforward but revolutionary: shorter cooking times, lighter sauces,
fresher and more seasonal ingredients, smaller portions presented with visual artistry, and an openness to
borrowing technique from Japanese and other non-French traditions.

Our menu this month borrows inspiration from the kitchens of Paul Bocuse, The Troisgros brothers, Roger Vergé, Frédy Girardet, and Alain Chapel.
