Summer heat is officially in full swing so a cold noodle dish feels very appropriate right about now.
Hiroshima is one of the most beautiful cities we’ve visited in Japan, and honestly, we miss it so much. This week we’re bringing back our Spicy Hiroshima Cold Tsukemen.
Featuring our house-made noodles served chilled with pork chashu, ajitama, menma, cabbage, scallions, chili threads, and this time we’ve added pickled lotus stems for an extra refreshing crunch.
As with last time, we’re offering two ways to enjoy it:
Traditional Hiroshima Style: a spicy soy-based dipping broth with a clean and refreshing finish.
Tan Tan Style: our spicy sesame version made with sesame paste, bringing a nutty and tangy flavor.

This Week’s Special: Duck Niboshi Shio Tsukemen 🦆 🐟 🍜
This week’s special features a light yet deeply flavorful duck broth made with duck bones, ma-konbu, niboshi, and a variety of dried seafoods for a clean, ocean-packed umami.
Served with our semi thick tsukemen noodles, two types of pork chashu, spinach, menma, nori, ajitama, scallions, and yuzu kosho.
Enjoy the broth as is, then mix in the yuzu kosho halfway through to brighten the broth with citrus and a subtle kick of heat.
Available starting Wednesday at 5 PM and throughout the week or until sold out.

Japanese Curry Tsukemen is this week’s Summer Tsukemen Special! 🍛 🍜
If you love Japanese curry and tsukemen, then this one is for you 😋
We start with a rich and thick chicken dipping broth and blend it with classic Japanese curry to create an umami-packed dipping broth that’s rich, savory, and full of flavor.
Served with our thick and chewy noodles made from Hokkaido flours, along with pork chashu, menma, scallions, shallots, fukujinzuke, ajitama, and nori.
Available for dine-in Wednesday through Sunday, or until sold out.

The Tsukemen Series is back this week with Shoyu Wonton Tsukemen!
Have you had wontons in ramen or tsukemen before?
Wontons are incredibly popular at many great ramen shops in Japan. Japanese-style wontons are known for their delicate, thin wrappers, giving them an incredibly smooth and silky texture that’s so awesome to slurp.
Each bowl comes with two housemade pork & shrimp wontons, an old-school shoyu dipping broth made from pork, chicken, and gyokai (seafood), topped with chashu, menma, scallions, nori, ajitama, and yuzu.
This one takes a lot of time and labor to prepare, from folding each wonton by hand to building the broth and noodles from scratch. We’re excited to finally share it with y’all and hope you enjoy it as much as we do.

One more Mazesoba special before we go back to tsukemen next week 🍜
This week’s special: CURRY MAZESOBA
We made this as staff meal last week and it was so good we decided to share it with everyone.
Thick noodles with classic Japanese curry, spicy ground pork, raw egg yolk, mozzarella cheese, minced garlic, scallions, onions, and pickles. Mix everything together and enjoy. 😋

This week we’re taking a short pause on tsukemen and bringing a special mazesoba back to the menu 🍜
Introducing our Junk Jiro Style Mazesoba - inspire by jiro style ramen. Thick and chewy mazesoba noodles tossed in soy sauce and loaded with an absurd amount of toppings.
A mountain of bean sprouts and cabbage, pork chashu, ground pork, kimchi, scallions, fried shallots, fresh garlic, soy-marinated pork fat, mozzarella cheese, mayo, bonito flakes, raw egg, and yes… Cheetos.
Messy, garlicky, heavy, j***y, and extremely satisfying.

Spicy tsukemen continues this week with our Spicy Jiro Kei Tsukemen 🔥🌶️
A garlicky tonkotsu shoyu dipping broth layered with soy marinated back fat on top, bringing richness and depth. Just enough heat to make you sweat. Thick tsukemen noodles sit under a heap of bean sprouts, finished with more back fat, chives kimchi, extra garlic, and pork chashu 😋
Tsukemen specials start every Wednesday and run through the week or until sold out, usually before Sunday.

This week’s tsukemen special: Spicy Chashumen Tsukemen (aka Spicy Chan-kei style tsukemen) 🌶️
Have you tried Chan-kei style? Lately, it’s been blowing up in Tokyo as one of the go-to comfort meals for busy salarymen. Unlike last week’s rich niboshi tonkotsu, Chan-kei leans on a crystal clear pork broth that’s light in appearance but loaded with porky depth and umami. It’s simple and satisfying without feeling heavy.
The noodles: flat, smooth, and slippery, built for slurping, made with Hokkaido wheat for that perfect bite. Toppings include chashu, menma, scallions, nori.

Last year’s run was a blast, this year might be even better.
We’re starting with a banger: Niboshi Tsukemen
Rich, thick tonkotsu gyokai dipping broth layered with bold niboshi flavors. Paired with thick, chewy noodles made with premium Hokkaido wheat. Topped with chashu, menma, ajitama, nori, naruto, scallions.
Available Wednesday - Sunday or until sold out. These specials tend to sell out before the end of the week so come early to secure a bowl.

This week, we’re cooking up something special for crawfish season - bringing back a fan favorite from last year: Mala Cajun Crawfish Ramen 🔥🦞
Umami-rich chicken broth layered with garlic cajun flavor, finished with a touch of mala 🌶️ heat. Topped with mala crawfish, sausage, ajitama, scallions, cilantro, and pickled jalapenos. It hits all the right notes.
