It doesn't get better than Texas watermelon season, so we're celebrating by using them in all the ways we can throughout the hotel. We're starting with a dish that is near and dear to Chef Todd: Watermelon Curry.
"This was a signature dish from my former chef, Floyd Cardoz, of Tabla in NYC. Floyd was my chef at Tabla in NYC. He taught so many of us who worked for him about our relationship with food and how we need to respect the products we use. He taught me to be a student of the role history and culture play in food authenticity, and he taught me how to be a level-headed leader. Obviously, he made a big impact on my professional life.
Rather than interpreting Floyd's dish, we're serving his original curry in his honor with poha-crusted red snapper on top of caramelized watermelon, watermelon curry, roasted peanuts and nasturtium. It's bright, it's spicy and it's perfect for Texas summer." — Chef Todd ()
