Beet-dyed deviled eggs with whipped potato salad

I’m catering Austin’s VIP’s soon, and when working on the menu, I wanted to incorporate appetizers where the guests get a chance to experience flavors that are nostalgic to me, so I went with refining the presentation of childhood favorite foods. There wasn’t a party in my household without beet potato salad being part of the food line up. Served with bbq chicken, macaroni au gratin, and diri djondjon all on the same plate!? Don’t get me started! I used to live for these parties we constantly had, knowing we’d have leftovers for days. And the beet potato salad was even better the next day.

'Legim ak Krab' 🦀 but make it bite size.

A Haitian staple usually served with rice, fried plantains, and rich black bean gravy. This is a great way to showcase the amazing flavors of this hearty dish as an appetizer.

To get to the location at E Anderson Lane in Austin, you have a few options:

Public Transport:
1. Take the bus to the nearest stop on E Anderson Lane.
2. From there, walk east on E Anderson Lane until you reach the destination.

Driving/Parking:
1. If you are coming from downtown Austin, take I-35 N.
2. Continue on I-35 N and take exit 239-240A toward US-183 N.
3. Merge onto US-183 N and continue for about 5 miles.
4. Take the exit toward Cameron Rd/Ohlen Rd/Woodrow Ave.
5. Keep right at the fork and follow signs for Ohlen Road.
6. Turn right onto Ohlen Road and continue for about 0.3 miles.
7. Turn left onto E Anderson Lane, and you will find parking options along the street or in nearby parking lots.
