From the Texas Ranch to Our Texas Table! 🦌 🤠 Today, Tony had the opportunity to visit Broken Arrow Ranch, located in Ingram, just outside Kerrville, Texas, as we prepare for November’s Texas Table: Gulf, Field & Ranch menu at Canyon Grille.

What a great Texas story!

Founded in 1983, Broken Arrow Ranch pioneered the field-harvesting of truly wild, free-roaming game. Second-generation owner Chris Hughes shared how his father, Mike Hughes, developed the techniques and helped advance the legislation that made this unique approach possible. Chris took some time to share the fascinating story behind Broken Arrow Ranch with Tony.

More than four decades later, this family-owned Texas business continues to bring exceptional wild game from the field to the table. They field-harvest animals with this shown mobile unit.

And Tony didn't leave empty-handed!

He returned with a special care package for our chefs: Elk Osso Buco, Wild Boar, South Texas Antelope and Quail.

Now the fun begins! Executive Chef Alex and Chef AJ will be putting their creativity to work developing some exciting new dishes for November.

🇩🇪 This isn’t just schnitzel. It’s a little taste of tradition. Okay, it’s time to break down our Old-World German-Texan Jäger Schnitzel and explain why this dish belongs at the center of your Oktoberfest experience.

It starts with a fresh pork cutlet from Miiller's Meat Market & Smokehouse Llano, prepared with a little Texas know-how. It’s lightly dredged in flour, dipped in egg wash, coated in panko breadcrumbs, and fried until beautifully golden and crisp on the outside while remaining tender and juicy inside.

Then comes the Jäger sauce.

A rich, velvety brown sauce filled with earthy Texas wild mushrooms and finished with cream is spooned over the crispy schnitzel. Savory, creamy and deeply satisfying; the kind of sauce that makes you want one more bite before you’ve finished the first.

Alongside it sits our delicate, pillowy house-made spätzle, with a rich, buttery finish that was made for soaking up every last bit of that mushroom sauce.

And then there’s the red cabbage.

This one is personal.

Chef Alex reaches back into his own German heritage with his grandmother’s braised red cabbage recipe. Sweet, tangy and slow-cooked, it brings that unmistakable flavor of an old family recipe; the kind of food that can take you back to another place and another time with a single bite.

Put it all together: crispy schnitzel, earthy mushroom cream sauce, buttery house-made spätzle and a family recipe passed down through generations.

That’s what we wanted October’s Texas Table to be about. Not simply serving German-inspired food, but bringing together German tradition, Texas ingredients and the stories behind the food.

Working side by side, they’ve helped reshape our kitchen through a new culinary strategy, recipe development, improved ex*****on, and a greater focus on sourcing quality ingredients.

Their work together on our Texas Table is the next step in that journey, and it’s already creating real excitement among our team and our guests.

We appreciate Alex and AJ’s commitment, creativity, and leadership in making Canyon Grille better every day and creating a kitchen culture built around teamwork, quality, consistency, and pride in what we put on every plate.
